Blueberry Pancakes
Toss into a blender in this order and blend:
1 cup fat free milk, 1 egg, Tbsp canola oil or 1/4 cup applesauce, 2 tsp baking powder, 1 cup whole wheat pastry flour, 1-2 packets of Truvia. Pour into a bowl and mix in as many blueberries as you desire.
The trick to pancakes is cooking them on medium low heat, and flipping them when the bubbles start to pop and stay open.
No syrup needed!

Roasted Squash Salad
Peel and slice a portion of banana squash
Mix Italian seasoning (no salt), balsalmic vinegar, garlic and a bit of olive oil.
Dip slices of squash in the mixture.
Broil on high for 10-15 minutes until a fork slides through without resistance.
Serve on a bed of spring greens with LaChoy rice noodles, pepper jack cheese bits, and spritz with Wishbone Balsalmic Breeze salad spritzer.
