Aruba-Ruba-Reuben!


I dig a good Reuben any day. C doesn't like rye, so I make him cheater Reubens.

Sauerkraut
Fat Free Kraft Thousand Island
Corned Beef
Light Swiss
Toasted Jewish Rye (or whole grain bread - shown below)

Teriyaki Mahi Mahi


You will need the following two ingredients:


Thaw the fillets. The sauce soaks in better that way:
I {heart} foil! No mess!
Pour about 1/4-1/2 cup over the fillets (about 1 Tbsp per fillet or less)

Brush evenly over fillets
Bake 350* for 20-25 mins (as long as they are thawed)

Whole Wheat Crepes



Crepes. Light, thin, fill it with fruit, sprinkle with cinnamon, top with whip cream, or fill with meats or veggies!


Measurements are helpful here:
1 1/2 cups fat free milk
2 eggs
1 cup whole wheat pastry flour
1 Tbsp canola oil

I throw all ingredients in a blender (plus a packet of Splenda sometimes), pour 1/4 cup into the middle of a warm non-stick pan, and swirl the batter outward. The first one usually looks funny. Once the edges lift, flip, and cook for 30-40 seconds (if that).
